At Ro Danish Bakery, everything begins with time.

Time to ferment, time to develop flavor, and time to

do things properly. We are an authentic Danish bakery rooted in tradition, where every loaf of sourdough bread, every slice of rye, and every pastry is made with care, patience, and high quality ingredients.

There are no shortcuts here - only honest baking guided by a deep respect for craft.

Our Philosophy

Patience

The name “Ro” means calm, and it reflects everything we stand for.

It is the calm of slow fermentation, the calm of turning good ingredients into amazing products with our hands, and the calm that comes from giving both ourselves and our products the time needed. It is also the calm we hope to share with you - a moment

to pause, to enjoy, and to be present.

Integrity

At Ro, we believe the world is moving too fast. Too much is processed, rushed, and consumed without thought. We are choosing a different path. We bake slowly, we live deliberately, and we create food that nourishes both body and mind. This is not a concept or a trend - it is simply who we are.

Joy

Ro was born from a personal turning point. After experiencing burnout, our founder Caroline found meaning, joy and balance again through baking. What started as a search for calm became a way of life. Today, Ro reflects that journey: a place where food is made with intention, and where slowing down is not only allowed, but essential.

Caroline Kjærgaard Heiss

Founder

Caroline was born and raised in Denmark and moved to Leuven in 2021 to pursue a two-year program at KU Leuven. During that time, the city quickly became her home - she built strong friendships and found love. When the summer of 2023 came and it was time to return to Denmark, she chose to stay, trusting her intuition. It turned out to be the right decision: today she is married to Kwinten, they’ve adopted Rumle - a sweet Finnish Lapphund - and have settled in Heverlee.

Baking has always been part of Caroline’s life. What started as a passion alongside her studies became something more meaningful during a challenging period working in the corporate world. Feeling out of place and eventually burnt out, she found calm and clarity in working with her hands. Baking became a way to reconnect - and slowly, a new path began to take shape.

In the fall of 2025, Caroline returned to Denmark to complete internships at several sourdough bakeries. There, she not only refined her craft but realized she had found what she truly wanted to do. She thrives at the intersection of creativity, innovation, and repetition - and finds her greatest joy in creating and sharing delicious things with others.

 At Ro, we believe that exceptional products start with the ingredients. We work primarily with organic ingredients whenever possible, always with a focus on quality.

We choose our suppliers with care, prioritising consistency, flavour, and craftsmanship.

Every ingredient is selected thoughtfully, with respect for both the product and the people behind it.
